Healthy Recipe Exchange

For me one of the biggest challenges in staying healthy is eating healthy! I try and cook healthy but most of the time the rest of the family wont eat it. It's so hard to find a healthy recipe that the whole family will eat! So I thought it would be fun to share recipes that are healthy and family friendly. If you have a recipe that your family likes and is healthy please leave a comment with a recipe. Here's mine:

Zucchini Spaghetti Casserole

1 bag penne noodles boiled and drained
1 large zucchini or 2 small zucchini chopped
1 green pepper chopped
1 red pepper chopped
1 can Spaghetti sauce
lots of cheese

In a 9x13 pan combine cooked and drained noodles and chopped vegetables (you can change veggies to different ones if your family likes different ones), pour spaghetti sauce over, top with desired amount of cheese. Bake uncovered for about 30 minutes at 350 degrees.

I'm so bad at eating healthy, too. I think because it's hard to make something healthy taste as yummy as french fries or ice cream..hahah BUt I need to try harder, I know. Here is something I made and loved it.

Roasted Cauliflower

Here is the recipe:
1 Head cauliflower
Olive oil
Salt
Pepper
Garlic Powder (I used minced garlic and worked as well)

Preheat oven to 400. Cut cauliflower into flowerettes. Combine EVOO, salt, pepper and garlic together then sprinkle over cauliflower and arrange on a baking sheet. Bake about 10 minutes.

Something I always make for the kids is rice and beans. They love it because it tastes good with all the spices and I usually make something else to go with it. You can make broccoli and then some type of meat for example.

Something else I have been making and they love it is pasteis assados, which is basically ground beef (and you can add vegetables to as well to make it healthier) inside a spring roll dough (you can find it in the fridge section in the grocery store) you close it and bake it until golden brown. Make sure you cook the stuff that you want to put inside before you bake it though. It will be crunchy on the outside and they can just eat it with their hands and even dip it in ketchup.

Oh, and to close the dough you lay it flat on a plate, put the stuff on it, wet the inside with a little water, fold it in half and use a fork to seal it. :)

All these three recipes are Mexican (my specialty :) but there are a whole other bunch in there you can try that are pretty healthy. Of course you'll also find a few that you probably shouldn't eat too often because they are fried but are oh so good every once in a while.

I am loving this! When i DO cook it's always the same stuff cuz I am not good at it and I don't really like cooking, but I will share two things I love:

HOMEMADE BEAN SALSA:

1 can black beans, washed
1 can white beans, washed
1 can black eyed peas, washed
1 can of corn
2 tomatoes, chopped
2 avocados, chopped
chopped cilantro
chopped green onions
fat free italian dressing
OR
mix olive oil + vinegar + lemon peper and salt

DELISH! Eat with corn chips or just a fork! It's very popular at parties too ;)

YUMMIE CHICKEN SALAD
1 can chicken meat
1 can corn
1 can kidney beans
1/2 cup craisins
1/2 cup sesame seads
1/2 cup chopped celery
1/2 cup cenoura ralada

Some people add mayo, I prefer without. Mix everything and enjoy, on bread, toast or just by itself.

Thanks Kika, I need to try those, they sound really good! And healthy! I think I need to cook more with beans, after looking at the recipes I realized how much more healthy my meals could be if I used more beans and rice and less white flour.
